Tuna Cucumber Boats

Do you ever just want a quick low carb snack? I love tuna melts and sandwiches so I thought I can make a cucumber tuna boat. It’s not messy to eat and very quick to prepare with few ingredients!

PREP TIME: 15 mins

SERVES: 1 person

Ingredients:

  • 1 cucumber

  • 1 can tuna from Natural Catch Tuna or your favorite brand

  • kewpie mayo

  • dijion mustard

  • boursin cheese

Directions:

  1. Cut cumber in half and scrap out the seeds to form a boat shape.

  2. Add your spreadable Boursin cheese (got mine from Trader Joe’s).

  3. Mix your tuna with djioion mustard and kewpie mayo.

  4. Season with salt and pepper to your liking.

If you don’t know what’s a good canned tuna, always look for those that are in extra virgin olive oil and are pole & line caught!

You can already tell the from the picture, the tuna is in big chucks and looks fresh!!
