Tomato Beef Curry

Something about Japanese curry dishes are always so comforting to eat. Makes your insides feel so warm and your tummy full. Tomato Beef Curry is a curry dish I like to make when I dont want to deep fry my protein to make katsu.

You can make this in one pot!

PREP TIME: 20 mins

COOK TIME: 90 mins (due to caramelization of onions)

SERVES: 6-8

Ingredients:

  • 1 lb thinly slices beef

  • 24 oz canned tomatoes

  • 2 large yellow onions (sliced)

  • 3 tbsp butter

  • 6 cubes of Japanese Curry Roux

  • 2 tbsp ketchup

  • salt and pepper to taste

  • 1 cup water

  • (optional) - cooked carrots

Directions:

  1. Melt 3 tbsp of butter. Add in your onions to your pan and turn heat to medium low. Caramelize your onions for 45 mins (you want to stir constantly).

  2. Add in your sliced beef and cook that for about 3-5 mins.

  3. Add in your 24oz canned tomatoes and 1 cup of water.

  4. Add in 6 cubes of curry.

  5. (Optional) - Add in your cooked carrots

  6. Add in your ketchup.

  7. Let it come to a boil and stir! Especially the bottom of the pan!!!

  8. Serve with a warm bowl of rice!
