Spam Kimchi Fried Rice

Fried rice is always my go to when I’m trying to get rid of things in my fridge, I typically throw everything in, add some seasonings, and call it a meal! If you have spam, kimchi, and egg in your household all the time, this kimchi fried rice is super simple and easy to make.

PREP TIME: 5 mins

COOK TIME: 10 mins

SERVES: 5-7people

Ingredients:

  • Half a can of spam

  • Half a white onion

  • 7 gloves of garlic

  • Green onions (3-5)

  • 1 cup Kimchi (I’m using Sinto gourmet brand)

  • 1 tbsp Kimchi juice

  • Gochujang

  • 1 cup Corn

  • 1 asian bowl day old rice

  • Sesame oil

  • Soy sauce

  • Seaweed

  • Fried egg for each portion

Directions:

  1. Cut your spam into bite size pieces.

  2. Sauté your spam until golden brown and move to one side of your pan.

  3. Add oil on the other half and add in your white onion, garlic, and white part of green onions. Cook till onion is translucent.

  4. Add in your kimchi and kimchi juice.

  5. Add in your day old rice.

  6. Season with sesame oil, gochujang, soy sauce to your liking. You may add some butter as well here.

  7. Add in your corn.

  8. Turn off heat, add in your green onions.

  9. Serve with fried egg and seaweed.
