Ground Lamb Appetizer

How delicious does this look? f you want to impress your friends this Summer, make them these delicious ground lamb on endive leaves! This is the perfect appetizer for any occasion! I love using Atkins Ranch Ground Lamb since it’s 100% grass fed from New Zealand and boasts the flavors of nature with subtle notes of the green pastures the sheep were raised on! It’s naturally low in sodium and fat, high in protein, and has all the zinc and B vitamins!

The cucumbers and mint in this recipe creates a refreshing taste that complements the New Zealand grass-fed ground lamb!

I also made a mustard shallot vinaigrette to top it off!

PREP TIME: 30 mins

COOK TIME: 30 mins

SERVES: 4-6 people

Ingredients:

  • Ground Lamb

  • 1/2 of a red onion

  • 5-7 mini bell peppers

  • 1/2 of a English cucumber

  • Mint

  • Parsley

  • Endive leaves (1 pack from Trader Joe’s)

  • Seasonings - salt, pepper, oregano, paprika

Directions:

  1. Sauté your ground lamb and season with salt & pepper

  2. When half way cooked, add in your red onions and bell peppers

  3. Cook your lamb until thoroughly cooked

  4. Turn off heat, add in your cucumbers, mint, and parsley. Mix well

  5. Serve on endive leaves and a mustard shallot vinaigrette (1-2 tbsp dijon mustard, 1 tbsp minced shallots, 1 garlic clove grated, 2 tsp maple syrup, 2 tsp apple cider vinegar, 1/2 tsp black pepper, 1/4 cup olive oil)
