Fluffy Protein Pancakes

This pancake recipe was inspired by the Japanese fluffy pancakes. Their pancakes are super jiggly and taste like an angel cake! If you never seen them, you can Google or Youtube it to see how it looks! If you never tasted a fluffy pancake, Gram Cafe is one of the cafes in the Bay Area that serves them if you want to try it out and do a comparison with this recipe~

This recipe is super simple and only need a minimal number of ingredients. It won’t give you the exact texture as the cafes because we are adding extra protein, fiber, and nutrients to it. It’s a little bit more dense but it is still light and super tasty!!


PREP TIME: 20-30mins

COOK TIME: 10mins

MAKES: 3-5 pancakes

Ingredients:

  • 3 eggs 

  • 1/4 cup whole milk 

  • 1/2 cup self raising flour (for each cup of all-purpose flour, you will need 1 ½ teaspoons of baking powder and ¼ teaspoon of salt)

  •  1 scoop USANA’s nutrimeal (comes in chocolate, strawberry, or caramel flavor)

  •  1 tbsp granulated sugar 

  • Date syrup or maple syrup to go with your pancakes

Directions:

  • Separate the egg yolk and egg whites. Place the egg whites asides for now (in the fridge if possible, not a big deal if left out)

  • Whisk together the egg yolks with self raising flour, your choice of USANA’s nutrimeal (caramel flavor makes the pancakes taste like the ones you buy from cafes) and milk. Whisk until the lumps are gone. Place aside.

  • Using a hand mixer, whisk together the egg whites and sugar until it is stiff and fluffy. Patience is key (takes about 5-10mins).

  • Slowly mix your egg whites to your batter, it should be like a melted marshmallow texture.

  • Using an ice cream scoop or pipping bag, cook your pancake batter in layers at LOW heat!!! LOW HEAT IS KEY! Add a small drop of water and put the lid on so the pancakes can stay moist!

  • Cook the first layer for about 4-5mins then uncover and add a second layer for 3-5mins, cover with lid and flip for another 5mins. You can add up to 3 layers depending how you want to eat your pancakes.

  • Drizzle with syrup on top!
